Different regions in Korea have a different methods of making kimchi, and it varies by region. In the South near Gimhae , one of the more traditional kimchi is an oyster kimchi. Not often seen throughout Korea and having tasted it for the first time last year, Lewis Hooper said that it was a distinct taste. In Seoul, a more traditional kimchi often reflects a broader palate, and although some of the flavors might be spicy, it varies in each household. The methods are the same for preparing it.
