Kimchi Season
November in Korea is all about Kimchi. Lewis Hooper from the Dojeon team has been in Korea since 2020, and during his time here, he has been fortunate to have two cold winters making Kimchi firsthand.
In South Korea, Kimchi is a traditional national dish, which has taken off worldwide since the rise of K-culture. Different regions in Korea have a different methods of making kimchi, and it varies by region. In the South near Gimhae, one of the more traditional kimchi is an oyster kimchi. Not often seen throughout Korea and having tasted it for the first time last year, Lewis Hooper said that it was a distinct taste.
In Seoul, a more traditional kimchi often reflects a broader palate, and although some of the flavors might be spicy, it varies in each household. The methods are the same for preparing it. If you are visiting Korea in November, we would strongly recommend partaking in a Kimchi making class. It will allow you to embrace and learn about Korean food through this family event, and it is a great way to learn about Korean culture!

Climate
The ice-cold start to the Korean winter has begun, and compared to some countries, Korea during November offers bright blue skies, which, although at times can be compared to the Arctic, offer a great atmosphere for exploring what Korea has to offer at a more affordable price than in the summer.

Be sure to pack your thermals, as the temperatures at night can drop, although if you do forget something, then don't worry, as Korea is used to these temperatures, and shops like Homeplus or Diaso to pick up extra supplies at a very affordable price.
We would, however, suggest packing some hand warmers, thermals and some warm socks with pajamas to keep yourself warm on the cold Korean winter nights, but remember layers are key!
Flights
November in Korea is a great time for tourists to visit! One of the main reasons is because it is actually the cheapest time of year to book a flight! Yes, you just read that right! With the summer holidays in the West having finished, and most workers and students back to their daily rat race, and with people gearing up for the Christmas holidays, November is not the most ideal month for most people to travel.
Foliage
The month of November is a great time to travel to Korea, as visitors and locals alike will be able to indulge themselves in the peak autumn foliage. Imagine walking through fiery red, orange and golden leaves, which are blanketed all over the floor, and in the back drop of the mountains and temples. This is a K-drama picture moment in itself, and it's the icing on the cake for many, including some of the Dojeon Media team.
Wrap up
As November is the start of winter, and yes, the nights are bitterly cold, the day hours, however, are actually fairly pleasant if you wrap up. For the most part, the skies are blue, the atmosphere is good, and the tourist attractions are also less crowded than in the summer months.
